ZUCCHINI TOMATO PIZZA: WHICH PIZZA CRUST IS SUITABLE FOR DIABETICS?

Half zucchini and half tomato on a very thin-crust.
This pizza crust can be made with low glycemic index flour. Besides, it is a good choice pizza for kids. It is half zucchini and half fresh-pressed tomatoes. My daughter prefers tomatoes and I prefer zucchini.
Of course, you shouldn’t eat pizza every day but once in a while is okay. It depends also if you eat lots of bread on a daily basis. For example, I don’t.
I buy one small loaf of rye bread and we eat the bread for a week. I am not a big fan of the dough products. So, it all depends.
WHICH FLOUR IS THE BEST FOR DIABETIC? (LOW GLYCEMIC INDEX)

I do my pizza with a stoneground white flour. Sometimes I use all-purpose flour. Besides, I make the pizza crust really thin.
I have tried to make pizza with alternative flours. Unfortunately, I can’t stand it. I tried baking with almond, tapioca, coconut flour, but the result was always the same. Tasteless. The experience of using alternative flours was the mostly crumbly crust, nothing like authentic pizza should taste.
Therefore, you need to experiment with different flours and test them out which one you enjoy the most. As I mentioned above, you can try the 50:50 ratio.
PIZZA SAUCE…
For the pizza sauce, I use the fresh-pressed tomato with garlic and drizzled olive oil for better taste. It is a better and easier version to make delicious and healthier pizza sauce. After mixing sauce ingredients together and brush it off on the pizza dough. For the zucchini side, I used simple garlic sauce described in the recipe.

Zucchini Tomato Pizza
Ingredients
Pizza Dough
- 3 cups flour or ½ and ½ Ratio of your choice flour
- 2 tbsp olive oil
- ½ tbs Natural Sea Salt
- ⅓ cup lukewarm water
- 1 packet yeast 1 cube of fresh yeast
- ½ cup warm water or as needed for the dough
- 1 tbs brown sugar
Zucchini Sauce
- 1 tbsp butter
- 1 clove garlic
- 1 tbsp flour the amount depends on how thick sauce you like
- ½ cup milk you may choose any milk type you prefer
Tomato Sauce
- 1 medium tomato the best wine tomato
- 1 tbsp olive oil
- ½ tbs Natural Sea Salt
- 1 clove crushed garlic
- ½ tbs fresh pepper
Toppings
- ½ medium zucchini
- 100 grams pizza cheese 3 oz, or one packet of pizza cheese
- 2 eggs
- ½ tbs Natural Sea Salt
- ½ tbs fresh pepper
Instructions
Pizza Dough
- Combine lukewarm water, sugar, and yeast. Let it is for 5 minutes.
- Combine dry ingredients, add the olive oil, and the yeast mixture and knead the dough for approx. for 10 minutes or until the dough isn't sticky.
- Let it sit for 45 minutes or until it doubles in size.
Zucchini sauce
Combine the ingredients for zucchini sauce. Then warm-up while constantly mixing butter, flour, and milk until it turns into a smooth semi-thick sauce.- Add in squeezed garlic
Tomato sauce
Press the tomatoes through the grinder
After the tomatoes are pressed, add olive oil and salt
Pizza
- After the dough is doubled in size. Roll it out into pizza shape and place it on wax paper.
- Pour the sauces over half of the pizza and spread thinly.
- Add sliced zucchini on half of the pizza. Then spread the cheese on the pizza. Lastly, glaze the mixed egg all over. Add salt and pepper and on 350F/180C approx 20 minutes until the crust is golden.Bon Appetit!
