This recipe is suitable for a very light dinner and it is easy to make. Especially during the winter season, easy baked chicken thighs with mushrooms and butter squash are very comforting. Try it with rabbit meat. You won’t regret it. Kids love rabbit meat, too.

4chicken thighsor rabbit thighs
½medium size butter squash cubed
2red onion minced
1tbspNatural Sea Salt
⅓cupgreen onion chopped
Cut into the meat ( 3 slights cuts) and brush it with olive oil with salt and pepper
Cut all the veggies and put the greased (with olive oil) baking dish
Sautee the onion and garlic. Make sure the garlic isn't burnt.
Add the meat and bake it 55 minutes for 350 F or 180 C. Covered with aluminum foil. The last 5 minutes uncover and broil.
You can add 1 cup of white wine into baking dish before baking if you wish.
