Zucchini Tomato Pizza
This pizza recipe is a healthier choice because it can be made with low GI flour. Besides, it is a good choice pizza for kids, too. My daughter loves it. Half zucchini and half tomato on a very thin crust.

Pizza Dough
- 3 cups flour or ½ and ½ Ratio of your choice flour
- 2 tbsp olive oil
- ½ tbs Natural Sea Salt
- ⅓ cup lukewarm water
- 1 packet yeast 1 cube of fresh yeast
- ½ cup warm water or as needed for the dough
- 1 tbs brown sugar
Zucchini Sauce
- 1 tbsp butter
- 1 clove garlic
- 1 tbsp flour the amount depends on how thick sauce you like
- ½ cup milk you may choose any milk type you prefer
Tomato Sauce
- 1 medium tomato the best wine tomato
- 1 tbsp olive oil
- ½ tbs Natural Sea Salt
- 1 clove crushed garlic
- ½ tbs fresh pepper
Toppings
- ½ medium zucchini
- 100 grams pizza cheese 3 oz, or one packet of pizza cheese
- 2 eggs
- ½ tbs Natural Sea Salt
- ½ tbs fresh pepper
Pizza Dough
Combine lukewarm water, sugar, and yeast. Let it is for 5 minutes.
Combine dry ingredients, add the olive oil, and the yeast mixture and knead the dough for approx. for 10 minutes or until the dough isn't sticky.
Let it sit for 45 minutes or until it doubles in size.
You can as well make it with caramelized onions. It gives extra sweetness to the zucchini part of the pizza. Just stir 1/2 sliced red onion, 2 tbsp olive oil and 2 tsp of brown sugar for few minutes until the red onion is soft. Then add on the dough before you top it with the zucchini. I used little of lard as well for better taste. But it is optional.
