Easy Chicken thighs in Oven with Butternut squash
Ingredients
- 4 chicken thighs or rabbit thighs
- ½ medium size butter squash cubed
- 2 red onion minced
- 3 cloves garlic minced
- 1 small zucchini
- 1 carrot sliced
- 1/2 cup olive oil
- 1 tbsp Natural Sea Salt
- 1 tbsp black pepper
- 1 tsp dried rosemary
- 1 cup mushrooms mixed
- ⅓ cup green onion chopped
- ¼ cup raisins
- ¼ cup pumpkin seeds
- ¼ cup parsley chopped
Instructions
- Cut into the meat ( 3 slights cuts) and brush it with olive oil with salt and pepper
- Cut all the veggies and put the greased (with olive oil) baking dish
- Sautee the onion and garlic. Make sure the garlic isn't burnt.
- Pour-over veggies
- Add the meat and bake it 55 minutes for 350 F or 180 C. Covered with aluminum foil. The last 5 minutes uncover and broil.
