FISH IN MEDITERRANEAN DIET
The signature food of the Mediterranean Diet is eating fish or any kind of seafood at least three times a week. The fish became famous in Spain in the 3rd Century during the Roman Empire. Later, the fish became a symbol of religion and Christianity. In the Mediterranean countries, a fish represents a lucky charm used to clear bad fortune. In Egypt, fish was usually consumed as the first meal upon entering a new build house. In Persia, it is eaten during the New Year to bring good luck and success.
After living in Spain for over a year, I can assure you that I have never consumed more fish or seafood in my life. Luckily, Spain is surrounded by the Mediterranean Sea and the Atlantic Ocean. Thus, the Fish Market in Spain is very huge and there is fish everywhere. What I found interesting is that Spaniards will eat any fish they catch from the sea.

CHOOSE SUSTAINABLE FISH
I often see at the fish market more of the overpopulated fish than the extinct ones, such as shark, swordfish, or tuna. The type of fish I see often is the small whole fishes such as trout, sea bass, golden, hake, or perch.
If you are from the US and you want to cook whole fish, the best choices are tilapia, red snapper, sea bass, or trout. Also, be cautious about buying fish in the US.
HOW TO MAKE IT?
The whole fish is easy to make. After she cleaned the fish, the lady at the fish market suggested that I rub olive oil on the fish. Also, she advised me to add natural sea salt and fresh pepper. I added some lemons and mint to the cavity, then baked at 220C or 425F for 20-24 minutes. The whole fish is ready to serve. If you prefer a more detailed whole fish recipe, I found this one very close to mine but I love it too.
